Food safety: Clean jars and tools, wash hands, keep lids loose for yogurt ferments, verify temperature with a probe thermometer, and refrigerate promptly after fermentation.
Clinical cautions: If immunocompromised, with central venous lines, acute pancreatitis, or ICU-level illness, avoid home ferments or proceed only under medical guidance. If dairy-intolerant, use the coconut path. If die-off symptoms (gas, bloat, brain fog) occur, reduce to 1/4 cup and titrate slowly.
Carbonation safety (S. boulardii fizzy drink): Use swing-top bottles or plastic soda bottles; burp daily at room temperature; never shake; refrigerate once lightly fizzy; open cold and over a sink; beware pressure build-up.
